Our food and our chefs are at the heart of everything we do at The Brasserie. Led by our Group Executive Chef, Stefan Matz, our team’s mission is to create dishes that make the finest of Ireland’s cuisine accessible to all. In creating The Brasserie, our team spent over twelve months researching and collaborating with suppliers, both in Cork and around Ireland. The result is menus that strive to offer the very best of our island’s meat, fish, and produce, paired with exceptional cocktails.

The Brasserie will open at the Radisson Blu Hotel & Spa Cork this 2 June for residents, with outdoor dining for non-residents from 7 June. Reservations for outdoor dining will open on 19 May, so please do check back soon.
The Brasserie is open daily for Breakfast, Brunch, Lunch, Afternoon Tea and Dinner – so you’re sure to find something you’ll love!
